Ingredients(Serves 4 as a snack)
2 cups bread flour
100 g (3 ½ oz) glutinous rice powder
1 teaspoons dried yeast
1 cup warm water (40℃ 104℉)
1 tablespoon sugar
½ teaspoon salt
4 tablespoons vegetable oil
∙ Filling
70 g (2 ½ oz) mixed nuts, roasted and crushed
100 g (3 ½ oz) dark brown sugar
1 teaspoon cinnamon powder
Method
1. Dissolve the yeast with 2 tablespoons of warm water in a bowl.
Combine flour, rice powder, and salt with yeast mixture to make the dough.
Knead the dough until the surface becomes smooth.
2. Proof dough for 40 minutes at 40℃ (104℉) until the dough rises almost twice its size.
3. In a bowl, combine all the ingredients for the filling.
4. Put some oil on both palms. Tear off some of the dough. Make the dough into a pocket shape.
Put 1 tablespoon of filling in the center. Seal the pocket tightly.
5. Heat oil in a pan. Place the sealed dough to grease one side of dough.
After 5 seconds, flip it over. Press down with a spatula.
Cook over medium heat until golden-brown. Press several times to evenly cook.
6. Serve immediately.
